After many weeks of research and attempts. We think we have something to present in the way of Nougat. We'd tried many recipes and tweeked a few on the way and came up with a sucessful very edible macadamia cranberry and manuka honey nougatine. The trick we feel is getting the sugar syrup and honey to a hard ball stage. Then the final folding of ingredients has to be a no nonsense quick fold and out of the bowl affair, as it sets so so fast. The end product has a fantastic chewy but light texture that doesn't stick to your teeth!
